Calling All Cooks!

Okay. Mommy is going to TRY to start cooking. At least crock-pot meals. My mom got me an adorable crock-pot as part of my Christmas present and I'm dying to use it. I have several recipes already, but I'm wanting more.  PLEASE post your one-step meals, crock-pot meals and anything else you think this mommy-to-be-non-cooking girl can handle! Note, I am on a strict food budget so things that include expensive cuts of meat are not going to be something I will do regularly. Also, I HATE chicken.


  1. Most groceries stores carry pre-packaged crock pot meals, ie: roast with veggies, for about $11-$13. It feeds my family of 4, so I know you could make it last a good while. No guess work. You open it, put it in the crock pot, it may tell you to add water, turn on the crock pot, and go about your day.

  2. Ok, this is so awesome. I make these shredded beef tacos from the crock pot that everyone thinks I slave over. And it's pretty cheap, with not a lot of ingredients but ALOT of flavor. You take about 1 1/2 lbs of cubed beef steak for pot roast, get the kind that is already cut up and isn't fatty. It isn't expensive at all. Getting it already cut up will save you on the shredding later. Then you will need:

    1 can diced fire roasted tomatoes (I used Hines)
    1 packet taco seasoning
    1 half an onion, sliced (optional to your preggo palate)
    1 carton beef stock (NOT broth. stock is richer)
    A drizzle of olive oil
    Flour tortillas
    Shredded Cheddar
    Sour Cream
    Hot Sauce
    Whatever else you like on your tacos

    In your crock pot, add the cubed beef and the onion and sprinkle with half the packet of taco seasoning. Drizzle with the olive oil and the pour the beef broth into the crockpot on the side of the meat (not disturbing the seasoning)until the broth comes to right below the level of the meat but does not cover it. Put the lid on and cook on low for 6 hours till done. 30 minutes before it's done, remove about a cup of the broth and discard. With 2 forks, shred the beef (you might want to remove the beef from the crock pot and shred it in a bowl, then add it back to the crock pot afterwards). Then, add the tomatoes and the rest of the taco seasoning. Put the lid back on and cook for the remaining 30 minutes. Spoon into tortillas and top with cheese, hot sauce and sour cream (and your other taco toppings). Yum!
